Ingredients
500g mutton pieces, washed and cleaned
Soorya Malabar Parotta
1/2 cup yogurt
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1/2 teaspoon turmeric powder
2 tablespoons oil
2 onions, finely chopped
2 tomatoes, finely chopped
1 teaspoon ginger-garlic paste
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon garam masala
1/2 teaspoon turmeric powder
Directions
To marinate the mutton, in a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt.
Add the mutton pieces to the marinade, ensuring they are well coated. Cover and marinate for at least 2 hours, or preferably overnight in the refrigerator.
In a pan, heat oil over medium heat. Add black peppercorns, cloves, cardamom pods, and cinnamon stick. Sauté for a minute until aromatic.
Add finely chopped onions and sauté until they turn golden brown.
Add ginger-garlic paste and sauté for a minute until fragrant.
Add finely chopped tomatoes and cook until they become soft and the oil starts to separate.
Add cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Mix well and cook for a couple of minutes.
Add the marinated mutton (discard excess marinade) to the pan. Mix well and let it cook until the mutton changes color and starts to release its juices.
Add enough water to cover the mutton. Season with salt.
Cover the pan and let the mutton simmer on low heat until it becomes tender and fully cooked. This may take about 1 to 1.5 hours, depending on the type of mutton.
Heat Soorya Malabar Parotta on a stove-top until crispy.
